Ingredients
β 1/4 cup olive oil
β 1 medium onion, chopped
β 1 large carrot, chopped
β 2 stalks celery, cubed
β 1 large potato, peeled and chopped
β 2 cloves garlic, minced
β 4 cups vegetable broth
β 1 cup tomato juice
β 1 cup water
β 1 teaspoon salt
β 1 teaspoon paprika
β 1/2 teaspoon cumin
β 1/2 teaspoon black pepper
β 1/2 teaspoon chili powder, optional
β 1/2 cup pearl barley
β 1 2/3 cups lentils or legumes of choice (such as green, red, yellow lentils, split peas, black-eyed peas, black beans, or mung beans)
β 1 cup baby spinach
Instructions
1-First, heat the olive oil in a large pot over medium-high heat. Add the chopped onion, carrot, and celery, and sautΓ© until they become translucent, which usually takes about 5 minutes. This step builds a flavorful base for your soup.
2-Next, stir in the minced garlic and chopped potato, cooking for another 2-3 minutes to let the flavors mingle. Then, pour in the vegetable broth, tomato juice, and water, bringing everything to a simmer. Add the salt, paprika, cumin, black pepper, chili powder if youβre using it, pearl barley, and lentils or your chosen legumes.
3-Let the soup simmer for about 30 minutes until the legumes and potatoes are tender. Finally, mix in the baby spinach and cook just until it wilts, then serve warm with fresh herbs for an extra burst of flavor.
