Description

Ingredients

– 2 tablespoons light brown sugar

– 2 teaspoons paprika

– 2 teaspoons onion powder

– 2 teaspoons garlic powder

– 1 teaspoon salt

– 1 teaspoon black pepper

– 12 chicken wing portions (6 whole wings with tips removed, cut into flats and drums)

– High heat tolerant oil, such as grapeseed oil


Instructions

1-Preheat the grill: Preheat the grill to medium heat, around 350°F (175°C), to ensure even cooking right from the start.

2-Mix the dry rub: In a small bowl, mix together the light brown sugar, paprika, onion powder, garlic powder, salt, and black pepper until well combined.

3-Prep the wings: Pat the chicken wings dry with paper towels and toss them in the dry rub, pressing the mixture into the skin to make it stick.

4-Oil the grill grate: Oil the grill grate lightly with a high heat tolerant oil, like grapeseed oil, to prevent sticking and promote easy flipping.

5-Arrange the wings: Arrange the wings in a single layer directly over medium heat on the grill for optimal cooking.

6-Cook the wings: Cook the wings for 10 minutes, then flip and grill for another 10 minutes; use an instant-read thermometer to check that the internal temperature reaches 165°F (74°C).

7-Manage flare-ups: If the wings begin to burn, move them off direct heat or reduce the grill temperature to 300°F (150°C) for better control.

8-Optional resting: Optionally, let the wings sit at room temperature for about 20 minutes before grilling to help with even cooking.
