Instructions

1-First, trim the 1 1/2 pounds of boneless skinless chicken thighs and place them in a resealable bag with the marinade. Mix in 1/4 cup lime juice, 1/4 cup olive oil, 3 cloves garlic, 2 teaspoons ground cumin, 1 1/2 teaspoons ancho chili powder, 1/4 cup chopped cilantro, 1 teaspoon salt, and 3/4 teaspoon black pepper. 2-Next, heat your grill to medium-high, around 425 to 450ยฐF, and cook the chicken for 5 to 6 minutes on each side until itโ€™s fully done. After grilling, let the chicken rest for 5 minutes before dicing it into cubes. This step ensures juicy, tender results every time.
