1/3 cup vintage cheddar cheese or gruyere, freshly grated

30g (1/3 cup) mozzarella, freshly grated


Instructions

1-First Step: Gather all ingredients and preheat a heavy-based skillet or non-stick pan over medium-low heat.

2-Second Step: Spread butter on both sides of each bread slice, covering all edges for even crisping.

3-Third Step: Lightly toast both bread slices in the pan for 1 minute to warm and begin crust formation.

4-Fourth Step: Flip one slice over, layer the cheddar cheese first, followed by the mozzarella on top, then place the other bread slice on top with the toasted side facing the cheese.

5-Fifth Step: Cook for 3 minutes until the underside is golden and crisp, pressing lightly with a spatula and adjusting heat as needed.

6-Sixth Step: Carefully flip the sandwich and cook for another 3 minutes until the other side is golden and the cheese is melted.
