1/2 teaspoon plus a pinch of sea salt

1/4 teaspoon coarse black pepper

1 pound (approximately 450 grams) thin-sliced chicken breast

1/4 cup crumbled feta cheese for garnish

1/4 cup fresh chopped parsley for garnish

Additional lemon wedges for serving


Instructions

1-Make the Marinade: In a large bowl, combine lemon zest and juice, olive oil, garlic, oregano, smoked paprika, sea salt, and black pepper. Mix well to combine all the flavors. Before adding the chicken, reserve 1/4 cup of this marinade to use for drizzling later.

2-Marinate the Chicken: Add the chicken breast slices to the remaining marinade in the bowl, coating them thoroughly. Cover the bowl and place it in the refrigerator for 30 minutes. This step is crucial for tenderizing the meat and building flavor.

3-Heat the Skillet: Heat a nonstick skillet over medium-high heat. Add a small amount of olive oil to the pan to prevent sticking.

4-Cook the Chicken: Remove the chicken from the fridge and place it in the hot skillet. Sear the chicken until golden on one side, then flip and cook for an additional 3-4 minutes. The chicken is done when it is cooked through and the juices run clear.

5-Assemble the Dish: Transfer the cooked chicken to a serving plate. Drizzle the reserved marinade over the top of the chicken. Sprinkle the chopped parsley and crumbled feta cheese generously over the chicken while it is still hot.

6-Serve: Serve the dish immediately with additional lemon wedges on the side for squeezing.
