– 1/3 teaspoon salt

– 1/2 cup unsalted butter, room temperature

– 1/2 cup warm milk

– 1 large egg, lightly whisked

– 1/2 teaspoon vanilla extract (optional)


Instructions

1-In a large bowl, combine and whisk together all dry ingredients for the chosen recipe until they’re well mixed.

2-Cut in the room temperature butter using your hands until the mixture looks like small crumbles, which helps create that perfect texture.

3-Mix in the lightly whisked egg to bind everything together nicely.

4-Gradually add the milk room temperature for the original or warm for the variation stirring until a fairly smooth dough forms. If it’s sticky, add a bit more flour; if it’s too dry, add extra milk to get it just right.

5-Divide the dough and roll it into balls: about 12 for the original recipe or 14-16 for the variation. Cover them and let them rest for 20 minutes so they become easier to work with.

6-Heat a griddle or comal over medium-low heat to get it ready for cooking.

7-Flatten each dough ball by hand between plastic wrap or by rolling it on a lightly floured surface to about 3 to 3½ inches across. Hand-rolling often gives smoother edges than using a press.

8-Cook each gordita on the hot griddle for 2 to 3 minutes per side, until they’re nicely browned and slightly puffed. Keep an eye on the heat and adjust after the first batch if they start to burn.

9-Keep the cooked gorditas warm by covering them with a clean towel to maintain their softness.
