Ingredients

3 to 4 tablespoons gochujang (Korean hot pepper paste)

1 teaspoon gochugaru (Korean chili powder or flakes)

2½ tablespoons light brown sugar

2 tablespoons low sodium soy sauce

1 tablespoon pure sesame oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground ginger

¼ teaspoon salt

¼ teaspoon black pepper

8 to 10 boneless, skinless chicken thighs (bone-in skin-on optional, with longer cooking time)


Instructions

1-In a small bowl, combine 3 to 4 tablespoons gochujang, 1 teaspoon gochugaru, 2½ tablespoons light brown sugar, 2 tablespoons low sodium soy sauce, 1 tablespoon pure sesame oil, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon ground ginger, ¼ teaspoon salt, and ¼ teaspoon black pepper to make the marinade.

2-Place 8 to 10 boneless, skinless chicken thighs in a large bowl or sealable bag and coat them thoroughly with the marinade.

3-Let the chicken marinate for at least 30 minutes at room temperature or up to 8 hours in the fridge for deeper flavor, as per the recipe’s preparation time.

4-Preheat your grill to 400ºF or heat oil in a grill pan or cast iron skillet over medium-high heat.

5-Cook the chicken thighs smooth side down for 4 to 5 minutes, then flip and cook the other side for another 4 to 5 minutes, adjusting based on size.

6-Use an instant-read thermometer to check that the internal temperature reaches 165ºF (74ºC) for safe eating.

7-Remove from heat, cover with foil, and let rest for 5 to 10 minutes before slicing to keep it juicy, as the tips suggest.
