Ingredients

Instructions

1-First, cook the bacon in a skillet over medium heat until crispy, then remove it and drain excess grease, leaving 2 tablespoons in the pan. This step adds that smoky base we all love.

2-Next, boil the gnocchi in salted water until they float, which takes about 2-3 minutes, and reserve 1 cup of the pasta water before draining.

3-Whisk the eggs and yolks in a bowl, gradually adding 2 tablespoons of warm pasta water to temper them and avoid scrambling.

4-Return the gnocchi and bacon to the skillet, coat with the bacon grease, then reduce heat to low. Slowly add the egg mixture while stirring, using more pasta water to reach a creamy sauce, then stir in the grated cheese and adjust with salt and pepper.

5-For the final touch, garnish with parsley if you like and serve right away.
