Description
🎄 Craft festive gingerbread cookies with warm spices like ginger, cinnamon, and cloves for holiday cheer and decorating fun.
🍪 Easy dough chills perfectly, rolls out smooth – soft-chewy centers with crisp edges, better than store-bought.
Ingredients
– 3 and 1/2 cups (440g) all-purpose flour
– 1 teaspoon baking soda
– 1/2 teaspoon salt
– 1 tablespoon ground ginger
– 1 tablespoon ground cinnamon
– 1/2 teaspoon ground allspice
– 1/2 teaspoon ground cloves
– 10 tablespoons (142g) unsalted butter, softened
– 3/4 cup (150g) packed light or dark brown sugar
– 2/3 cup (160ml) unsulphured or dark molasses
– 1 large egg, at room temperature
– 1 teaspoon pure vanilla extract
Instructions
1-Step 1: Mix the dry ingredients Start by taking a large bowl and whisking together the flour, baking soda, salt, ginger, cinnamon, allspice, and cloves. This helps the spices spread evenly through the dough, so every cookie gets the same cozy flavor. Set the bowl aside once everything looks well mixed.
2-Step 2: Cream the butter and sugar In a separate large bowl, beat the softened butter until it looks creamy and smooth. Then mix in the brown sugar and molasses until the mixture is fully combined. This step gives the dough its rich color and keeps the cookies soft once baked. If the mixture looks a little thick, keep going slowly and it will come together.
3-Step 3: Add the egg and vanilla Add the egg and vanilla extract, then beat until fully incorporated. The dough may look glossy at this stage, which is exactly what you want. The egg helps bind everything together, while the vanilla rounds out the spice flavor.
4-Step 4: Bring the dough together Slowly add the dry ingredients to the wet mixture. Mix just until a thick, sticky dough forms. Try not to overmix, since that can make the cookies tougher. If you have a stand mixer, use a low speed here. If you are mixing by hand, a sturdy spoon works just fine.
5-Step 5: Chill the dough Divide the dough into two portions. Wrap each portion tightly in plastic wrap, flatten it into a disc, and refrigerate for at least 3 hours or up to 3 days. Flattening the dough first helps it chill faster and makes rolling much easier later. This step is very important because the dough is naturally sticky from the molasses and butter.
6-Step 6: Prep the oven and baking sheets When you are ready to bake, preheat the oven to 350°F (177°C). Line baking sheets with parchment paper or silicone mats so the cookies lift off easily after baking. Having everything ready before the dough comes out of the fridge saves time and keeps the dough from warming up too much.
7-Step 7: Roll and cut the dough Lightly flour your work surface, your hands, and your rolling pin. On a generously floured surface, roll the chilled dough to 1/4-inch thickness. Cut into gingerbread men shapes and place them 1 inch apart on the prepared sheets. If the dough cracks at the edges, gently press the edges back together or let it sit for a minute or two until it softens slightly.
8-Step 8: Bake until set Bake for 9 to 10 minutes, rotating the sheets halfway through for even baking. Smaller cutters may bake a little faster, while larger ones may need a minute more. The cookies should look set around the edges and just a bit soft in the middle when they come out of the oven. They will finish setting as they cool.
9-Step 9: Cool before decorating Let the cookies cool on the baking sheets for 5 minutes, then move them to a wire rack to cool completely. Once fully cooled, they are ready for icing, sprinkles, or simple decorating. If you want a fun holiday pairing, these cookies taste wonderful beside a mug of hot cocoa or a plate of other winter sweets.
Notes
❄️ Chill dough at least 3 hours to make it easy to roll without sticking or cracking.
