Description

Ingredients

– 2 cups all-purpose flour

– 1 teaspoon baking soda

– 1½ teaspoons ground ginger

– 1½ teaspoons ground cinnamon

– ¼ teaspoon ground cloves

– ¼ teaspoon salt

– 1/8 teaspoon freshly ground black pepper (optional)

– 2/3 cup unsulphured dark molasses (avoid blackstrap molasses)

– 3/4 cup hot water (about 100°F or 38°C)

– 1/2 cup unsalted butter, softened

– 1/3 cup packed light or dark brown sugar (dark preferred)

– 1 large egg, room temperature

– 1 teaspoon pure vanilla extract

– 1 cup confectioners’ sugar, sifted for the optional orange icing

– 2 to 3 tablespoons orange juice for the optional orange icing


Instructions

1-First, preheat the oven to 350°F (175°C) and grease an 8×4 or 9×5-inch loaf pan to prevent sticking.

2-Next, in a bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, salt, and black pepper if you’re using it for added depth.

3-Then, combine the molasses and hot water, whisking until well mixed to create a smooth liquid base. In another bowl, cream the softened butter and brown sugar until it’s fluffy, then add the egg and vanilla extract, mixing until fully incorporated.

4-Alternately add the dry ingredients and the molasses mixture to the wet ingredients, stirring just until everything combines without overmixing the batter will be slightly thin, so handle it carefully. Pour the batter into the prepared pan and bake for 50 to 60 minutes, or 55 to 65 minutes for a smaller pan, until a toothpick comes out mostly clean with moist crumbs.

5-Once baked, let the loaf cool in the pan for a bit before transferring it to a rack. If you want to add the optional orange icing, whisk the confectioners’ sugar and orange juice until smooth and drizzle it over the cooled loaf for a finishing touch.
