Ingredients
β 2 1/2 cups all-purpose flour
β 1 teaspoon baking soda
β 1 teaspoon salt
β 1 1/2 teaspoons ground cinnamon
β 1 1/2 teaspoons ground ginger
β 3/4 teaspoon ground allspice
β 1/2 teaspoon ground cloves
β 1/4 teaspoon black pepper
β 6 tablespoons unsalted butter (softened)
β 1 cup brown sugar
β 2 large eggs
β 2 teaspoons vanilla extract
β 2 tablespoons unsulfured molasses
β 1-2 tablespoons confectionersβ sugar
Instructions
1-Preheat oven to 350Β°F. Prepare a large baking sheet by lining with parchment, a baking mat, or greasing with butter and flour.
2-Whisk together all dry ingredients (flour, baking soda, salt, cinnamon, ginger, allspice, cloves, pepper) in a bowl; set aside.
3-In a separate bowl, beat softened butter and brown sugar with an electric mixer on medium-high for about 2 minutes until combined.
4-Add eggs to the butter mixture and beat until well combined.
5-Stir in the vanilla extract and molasses.
6-Gradually add the flour mixture to the wet ingredients, stirring until a stiff dough forms; for gluten-free versions, use gluten-free flour blend accordingly.
7-Divide the dough in half. With floured hands, form each half into a slightly flattened log approximately 12 inches long and 2 inches wide on the prepared baking sheet.
8-Sprinkle the logs lightly with confectionersβ sugar.
9-Bake for 30 minutes, or until the logs are slightly firm to the touch.
10-Let the logs cool on the baking sheet for 5-10 minutes.
11-Transfer the logs to a cutting board and slice them diagonally into 3/4-inch wide pieces.
12-Place the slices cut side down back onto the baking sheet.
13-Bake for another 10 minutes, or until the biscotti are crisp.
14-Cool completely on a wire rack.
Notes
πΏ If the dough is sticky when forming logs, flour hands or refrigerate briefly for easier handling.
π¬ For extra texture and flavor, consider adding chopped crystallized ginger to the dough.
π« Dip one end of cooled biscotti in melted dark chocolate for added indulgence.
