3 scallions, thinly sliced (separate white and green parts)

4 cloves garlic, minced

1 1/2 tablespoons fresh ginger, minced or grated

1 1/2 pounds ground pork (or substitute with ground chicken, turkey, beef, or seitan)

1/3 cup packed light brown sugar

3 tablespoons lime juice

1 tablespoon sriracha (adjust to taste)

Fine sea salt

Freshly ground black pepper

Chopped peanuts for toppings

Extra lime wedges for toppings

Chopped fresh herbs such as cilantro, mint, or Thai basil for toppings

Jasmine or other long-grain white rice

Coconut milk

Fine sea salt

Instructions

1-Heat 1 tablespoon olive oil in a large sautΓ© pan over high heat. Add the white parts of the 3 sliced scallions, 4 minced garlic cloves, and 1 1/2 tablespoons grated ginger, and sautΓ© for 1 2 minutes until everything smells amazing.

2-Next, add 1 1/2 pounds of ground pork and break it apart with a spoon, cooking until it’s no longer pink and nicely browned.

3-Stir in 1/3 cup packed light brown sugar, 3 tablespoons lime juice, and 1 tablespoon sriracha, mixing well. Let the pork sit undisturbed for 2 minutes to get that tasty caramelization, then stir and cook for another 1 2 minutes.

4-Season with fine sea salt, freshly ground black pepper, and tweak the sriracha or lime juice if you want more kick or zing.

5-Once done, serve the warm pork over your freshly made coconut rice and top with chopped peanuts, the green parts of the scallions, fresh herbs, and lime wedges for extra flair.
