Instructions

1-Start by preheating your oven to 400ยฐF (204ยฐC) and patting the chicken dry with a paper towel for that perfect crisp. Remove the giblets, tuck the wings under the breast, and tie the legs together with kitchen twine to ensure even cooking.

2-Next, in a small bowl, mix 3 tablespoons melted butter, 1 teaspoon salt, ยฝ teaspoon pepper, and thyme. Rub this mixture all over the chicken, including underneath the skin, to lock in flavors. Stuff the cavity with ยฝ onion, the garlic head sliced in half, and thyme sprigs for added aroma.

3-Place the chicken breast side up on a baking dish and roast it until the skin turns golden and the internal temperature hits 165ยฐF (74ยฐC), which takes about 60 to 75 minutes. During cooking, spoon the juices over the chicken to keep it moist. After roasting, let it rest for 15 minutes before carving, then serve with lemon slices for a fresh touch.
