Description

πŸ₯© Roasted Garlic Parmesan Ribeye Steaks offer a juicy, flavorful meat experience enhanced by rich, aromatic compound butter.
πŸ§„ This recipe combines the deep smokiness of slow-cooked ribeye with savory garlic parmesan butter for a restaurant-quality meal you can make at home.

Ingredients

– 1 lb ribeye steak (bone-in for richer flavor)

– Salt for seasoning the steaks

– Coarse black pepper for seasoning

– Garlic powder for seasoning

– 3 cloves garlic, minced for the steak and butter

– 4-6 garlic cloves from one bulb for roasting in the compound butter

– 1 block unsalted butter for the compound butter

– 1/3 cup grated Parmesan cheese for the compound butter

– 1/2 diced shallot for the compound butter

– 2 teaspoons chili flakes for the compound butter

– 2 tablespoons lemon juice for the compound butter

– 1 teaspoon black pepper for the compound butter

– 1 teaspoon kosher salt for the compound butter

– Canola oil for roasting garlic

– A pinch of salt for roasting garlic

– 2 tbsp olive oil for searing the steak

– Petite potatoes

Instructions

1-Gather: Gather all ingredients and prepare your workspace. Pat the bone-in ribeye steaks dry and season them generously with salt, coarse black pepper, and garlic powder. If your steak is thicker than one inch, this method works great; otherwise, skip the reverse searing for simpler cooking.

2-Smoke: Smoke the steaks at 250Β°F for about 40 minutes until the internal temperature hits 115Β°F. While the steaks smoke, boil the petite potatoes in salted water for 6-8 minutes until they’re tender but still firm, then let them cool for 30 minutes.

3-Preparing the Roasted Garlic Parmesan Butter: Cut off the top of one garlic bulb to expose the cloves, wrap it in foil with a bit of canola oil and a pinch of salt, then bake at 400Β°F for one hour until soft and golden.

4-Mix Butter: Once roasted, combine the garlic with 1 block of unsalted butter, 1/3 cup grated Parmesan cheese, 1/2 diced shallot, 2 teaspoons chili flakes, 2 tablespoons lemon juice, 1 teaspoon black pepper, and 1 teaspoon kosher salt. Mix well, wrap it up, and refrigerate for one hour until it’s firm and ready to use.

5-Sear: After smoking, sear the steaks on each side for 60-90 seconds to get that perfect crust. Let them rest on a wire rack, top each with 2 tablespoons of the compound butter, and cover loosely with foil.

6-Cook Potatoes: Meanwhile, heat a plancha or flat griddle and place the cooled petite potatoes on it. Smash them flat, cook for about 3 minutes until crisp, flip them, add small portions of the compound butter, finish cooking, then remove.

7-1: Gather all ingredients and prepare your workspace by patting the steak dry and mincing garlic.

8-2: Season the steak generously with salt and pepper on both sides.

9-3: Heat olive oil in a skillet over medium-high heat until shimmering.

10-4: Sear the steak for about 4 minutes per side for medium-rare, adjusting time according to thickness.

11-5: Reduce heat to low, sprinkle minced garlic evenly over the steak, and cook for another 1-2 minutes.

12-6: Remove the skillet from heat, and sprinkle Parmesan cheese over the steak, allowing it to melt slightly.

13-7: Let the steak rest for 5 minutes to retain juices before slicing.

14-Final Step: Serve hot with your choice of sides, like the crispy potato cakes.

Notes

🧈 Make the roasted garlic Parmesan butter at least one hour in advance to allow flavors to meld.
🌑️ Use a reliable meat thermometer to achieve perfect steak doneness.
πŸ₯” Don’t overcook petite potatoes; they should be tender yet firm before smashing and crisping.
