Ingredients

– 2 pounds Ground Chicken

– 1/2 cup Yellow Onion (finely diced)

– 10 cloves Garlic Cloves (pressed or minced)

– 3/4 cup Breadcrumbs (or crumbled dense bread)

– 1 Large Egg

– 3 tablespoons Fresh Parsley (finely minced)

– 3 ounces Parmesan Cheese (freshly grated)

– 1 teaspoon Fine Sea Salt

– 1/2 teaspoon Freshly Cracked Black Pepper

– Additional Grated Parmesan (optional topping)

– 2 tablespoons Olive Oil

– 3 cloves Garlic Cloves (pressed or minced)

– 1 tablespoon All-Purpose Flour

– 1 1/2 cups Heavy Whipping Cream

– 3 ounces Parmesan Cheese (freshly grated)

– 1 tablespoon Fresh Parsley (finely minced)

– 1/4 teaspoon Fine Sea Salt


Instructions

1-Preheat your oven: Preheat your oven to 375Β°F (190Β°C) and lightly grease a 12-cup muffin tin to ensure nothing sticks.

2-Combine the ingredients: In a large bowl, combine the ground chicken, finely diced yellow onion, pressed or minced garlic cloves, breadcrumbs, large egg, finely minced fresh parsley, freshly grated parmesan cheese, fine sea salt, and freshly cracked black pepper. Mix just until everything is evenly incorporated don’t overdo it, or you’ll end up with tough meatloaves.

3-Portion and shape: Portion the mixture into 12 equal parts, about 3 tablespoons each, shape them into balls, and place them in the muffin cups. If you like, sprinkle a bit more grated parmesan on top for extra cheesiness.

4-Bake: Bake for 22 to 25 minutes, or until the internal temperature hits 165Β°F. Let them rest in the pan for 5 minutes before serving to keep those juices locked in.

5-Prepare the creamy sauce: Warm the olive oil in a small saucepan over medium heat, add the garlic cloves, and sautΓ© until fragrant. Stir in the all-purpose flour and cook for a minute, then gradually whisk in the heavy whipping cream until it thickens slightly. Add the parmesan cheese and fine sea salt, stirring until melted and smooth, and finally mix in the fresh parsley.

6-Serve: Serve the meatloaves drizzled with this warm sauce, and garnish with extra herbs or parmesan if you’re feeling fancy.
