2 pounds (approximately 900 grams) top sirloin steaks each about 1.5 inches thick

8 tablespoons (about 113 grams) unsalted butter softened
1 tablespoon finely minced garlic
2 tablespoons chopped parsley
1 teaspoon lemon zest
1 teaspoon kosher salt for the garlic butter
Instructions
1-First, begin by combining the softened butter with the garlic, parsley, lemon zest, and kosher salt in a bowl. Mix it all well to create a rich garlic butter, then shape it into a log and store it in the fridge until needed.
2-Next, remove the steaks from the fridge 30-45 minutes before cooking so they reach room temperature for even cooking. Heat a cast iron skillet over high heat until itβs very hot, then season the steaks generously with kosher salt and freshly ground black pepper on all sides. Place the steaks in the skillet without crowding them and sear for 4 minutes on one side.
3-Flip the steaks and cook for an additional 2 minutes for rare to medium-rare, adjusting the time based on your desired doneness. If your steak has a fat cap, sear those edges too.
