Ingredients
– 1 ½ lb (approximately 680 g) baby Yukon Gold potatoes, about 10-14 pieces
– 2 Tbsp + ¾ tsp kosher salt, divided
– 4 Tbsp unsalted butter (½ stick)
– 4 garlic cloves, finely grated (approximately 1 Tbsp)
– 2 Tbsp fresh parsley, chopped
– ¼ tsp freshly ground black pepper

Preheat your oven to 500°F (260°C), roast on the lower rack for about 10 minutes until golden-brown underneath, then move to the upper rack for another 10-15 minutes until crispy on top.
