Ingredients

Scale

3 ΒΎ cups (450g) all-purpose flour

2 Β½ teaspoons baking powder

1 teaspoon salt

2 β…“ cups (466g) granulated sugar

1 cup (227g) unsalted butter, softened

β…“ cup (80ml) vegetable oil

1 tablespoon vanilla extract

1 β…“ cups (320ml) buttermilk, room temperature

7 large egg whites, room temperature

β…” cup (100g) rainbow jimmies

1 pound (450g) unsalted butter

2 pounds (900g) powdered sugar

Β½ teaspoon salt

1 tablespoon vanilla extract

3 to 4 tablespoons heavy cream

Rainbow sprinkles for decoration

Instructions

1-Getting started with this funfetti cake recipe is straightforward and fun. Begin by preheating your oven to 350Β°F (175Β°C) and prepare three 8-inch cake pans by greasing and lining them with parchment paper. This step helps your cake release easily and ensures even baking.

2-Next, sift together the flour, baking powder, and salt in a bowl. This mix creates a fluffy base for your cake. In another bowl, beat the sugar, butter, and vegetable oil with an electric mixer until it’s smooth and creamy, which should take about 3 minutes to get that perfect texture.

3-Add the egg whites gradually in three parts, mixing on low speed between each addition, then blend in the vanilla extract until the batter is nice and fluffy. For a link to another easy cake idea, check out our pineapple sunshine cake for more inspiration on fruity twists. Now, alternate adding the flour mixture in thirds and the buttermilk in halves, mixing on low speed and scraping the bowl as needed. Gently fold in the rainbow jimmies to keep their colors vibrant.

4-Divide the batter evenly among the pans, tap them to remove air bubbles, and bake for 32 to 38 minutes. Rotate the pans after 20 minutes and check if they’re done by gently pressing the center they should spring back. Let the cakes cool in the pans for 10 minutes, then move them to wire racks and remove the parchment for the frosting step.

5-For the frosting, beat the butter and salt until soft and smooth. Gradually add the powdered sugar on low speed, incorporating the heavy cream one tablespoon at a time to keep it creamy. Add the vanilla extract and beat on medium speed for 1 to 2 minutes until it’s fluffy. To assemble, place one cake layer on a stand, spread 1 cup of frosting on top, and repeat with the remaining layers. Frost the whole cake, reserve some for piping, and decorate with sprinkles for that funfetti flair.

Notes
