Ingredients
½ cup (113 g) heavy cream or whole milk
1¼ cup (200 g) 50% dark chocolate or unsweetened cocoa powder (sifted)
½ cup (113 g) unsalted butter (or salted butter with adjusted salt)
½ cup (85 g) sifted powdered sugar
¼ teaspoon instant coffee powder (optional)
¼ teaspoon salt (omit if using salted butter)
2 teaspoons unsweetened cocoa powder (sifted)
1–2 teaspoons vanilla extract or essence
Instructions
1. Heat cream or milk in a saucepan over medium heat until small bubbles form around edges, avoiding boiling.
2. Reduce heat; stir in sifted cocoa powder or chopped dark chocolate until smooth and fully combined.
3. Add butter, powdered sugar, instant coffee powder, salt, and vanilla extract. Stir gently until melted and smooth.
4. Optionally strain the mixture to remove any lumps.
5. Cover surface of frosting with cling wrap directly to prevent skin formation.
6. Cool completely for about 45 minutes; once cooled, beat or stir to creamy consistency.
7. Use immediately as a spreadable frosting or thick glaze. Refrigerate for best hold; may soften at warmer temperatures.
