Description

🍓 Delight in a fresh and colorful fruit pizza that combines vibrant berries and creamy toppings for a refreshing dessert.
🍰 This easy-to-make recipe offers a crispy sugar cookie crust paired with a luscious cream cheese frosting, perfect for sharing with family and friends.

Ingredients

– 1 and 1/2 cups all-purpose flour

– 1 and 1/2 teaspoons cornstarch

– 1 teaspoon baking powder

– 1/4 teaspoon salt

– 1/2 cup unsalted butter, softened

– 3/4 cup granulated sugar

– 1 large egg, room temperature

– 1 teaspoon pure vanilla extract

– 8 ounces full-fat brick cream cheese, softened

– 3 tablespoons unsalted butter, softened

– 1 and 1/4 cups confectioners’ sugar

– 1 teaspoon pure vanilla extract

– 3 cups assorted sliced fresh fruit (such as apples, nectarines, peaches, grapes, kiwi, plums, cantaloupe, mangoes, oranges, mandarin slices, pineapple, blackberries, blueberries, raspberries, strawberries)

Instructions

1-First, in a medium bowl, combine the flour, cornstarch, baking powder, and salt to set up your crust base. Then, beat the softened butter and granulated sugar until creamy, add the egg and vanilla extract, and mix in the dry ingredients until just combined. Cover and chill the dough for at least 20 minutes and up to one day to make it easier to handle.

2-Next, preheat the oven to 350°F (175°C) and grease a 9-10 inch pizza pan. Press the dough into a circle about 1/3 inch thick and bake for 17-19 minutes until the edges are lightly browned. Allow the crust to cool completely before moving on.

3-After that, beat the cream cheese and softened butter together until smooth, then add the confectioners’ sugar and vanilla extract, mixing until creamy. Spread this mixture evenly over the cooled crust for a luscious layer.

4-Finally, arrange the sliced fresh fruit over the frosting as desired for a colorful finish. Slice and serve the pizza, and remember to refrigerate any leftovers for up to 3 days to keep it fresh. If you’re looking for more fruit-based treats, try our peach cobbler recipe for another easy option.

Notes

🍪 Chilling the dough helps prevent spreading during baking.
🍉 Avoid fruits with high water content like watermelon to prevent sogginess.
🍏 Brush fruits that brown easily, such as apples and peaches, with lemon juice to keep them looking fresh.
