Ingredients

– 400g block of low-moisture mozzarella cheese

– 180g bag of flavored tortilla chips (to be crushed)

– 1 litre vegetable or sunflower oil for deep frying

– 50g flour (approximately 1/3 cup)

– 2 eggs (beaten)

– 1 teaspoon smoked paprika

– 1 teaspoon cayenne pepper

– 1/2 teaspoon garlic powder

– 1/4 teaspoon salt

– 1/4 teaspoon black pepper

– Additional flaky sea salt for serving (optional)


Instructions

1-First, slice the mozzarella cheese block into 1/3 inch thick squares and then cut diagonally to create 24 triangles. This shape helps the cheese melt evenly without spilling out too soon. Next, crush the flavored tortilla chips into a breadcrumb-like texture using a food processor or by pounding them in a sealed bag.

2-Prepare three shallow dishes: one with seasoned flour mixed with smoked paprika, cayenne pepper, garlic powder, salt, and black pepper; the second with beaten eggs; the third with the crushed chips. Now, coat each cheese triangle first in the seasoned flour, then dip into the beaten eggs, and finally coat thoroughly with the crushed chips. Let the coated cheese rest for 10-15 minutes to help the coating stick well.

3-Heat the oil to around 180Β°C (350Β°F). Deep fry the coated cheese triangles in batches for 1-2 minutes until the cheese just starts to leak or the coating crisps. Remove with a slotted spoon and drain on a wire rack lined with paper towels. Finally, sprinkle with flaky sea salt while resting and serve immediately for the best taste. For a healthier twist, you can freeze the cheese first if baking or air frying.
