Ingredients

– 4 cups fresh cherries, pitted (about 2 pounds or 900 grams)

– 1 cup water (240 ml)

– 3 teaspoons freshly squeezed lime juice or 1 to 2 teaspoons fresh lemon juice, to taste

– 1/2 teaspoon kosher salt

– Optional: 1/2 teaspoon vanilla extract and 1/4 teaspoon almond extract

– Optional: 6 ounces (about 180 ml) black cherry soda

– Optional: 1 to 3 tablespoons liquor


Instructions

1-Prep cherries: Wash and pit 4 cups of fresh, ripe cherries for the best flavor and texture.

2-Make simple syrup: In a saucepan, combine 1 cup water and 3/4 cup granulated sugar. Heat gently over medium heat, stirring occasionally until sugar completely dissolves. Remove from heat and allow to cool to room temperature.

3-Combine ingredients: Add pitted cherries, 1 tablespoon lemon or lime juice, and 1/2 teaspoon kosher salt to the cooled syrup in a blender or food processor. Blend until smooth.

4-Strain mixture: Pour the puree through a fine mesh sieve to remove skins and solids, producing a silky sorbet base.

5-Egg float test (optional): To check sugar concentration, gently place a clean egg into the mixture. If it floats with a small patch of shell above the surface, sugar level is adequate for a soft, scoopable sorbet. Add syrup if egg sinks and test again.

6-Chill base: Cover the sorbet base and refrigerate for at least 1 hour to meld flavors and chill thoroughly.

7-Churn sorbet: Pour chilled base into a pre-frozen ice cream maker. Churn according to manufacturer’s instructions, usually about 15 minutes, until soft-serve texture forms. Optionally, add black cherry soda during churning for an added flavor dimension.

8-Freeze firm: Transfer to a freezer-safe container, cover tightly, and freeze for 2 to 4 hours until firm.

9-Serve: Let sorbet soften at room temperature for a few minutes before scooping. Garnish with fresh mint or whole cherries if desired, and adjust sweetness to taste before serving.
