¼ cup brown sugar, divided for bagel dough

2 ¼ teaspoons active dry yeast (1 packet)

1 cup warm water (about 110 degrees F), divided for bagel dough

3 ½ cups bread flour, plus more for kneading

1 ½ teaspoons salt

¾ teaspoon ground cinnamon

¼ cup pure maple syrup

1 teaspoon vanilla extract

2 large eggs, divided for bagel dough

2 tablespoons brown sugar for cinnamon sugar topping

1 ½ teaspoons ground cinnamon for cinnamon sugar topping


Instructions

1-First Steps: Mixing and Soaking: Dissolve 2 tablespoons brown sugar and yeast in ½ cup warm water, then let it sit until it’s nice and foamy that’s your sign it’s ready to go. In a big bowl, mix together the flour, salt, cinnamon, and the rest of the brown sugar before adding in the yeast mix, another ¼ cup warm water, maple syrup, vanilla, and one egg. Stir it all up until you get a dough that’s begging to be kneaded, which takes about 5 minutes with a mixer or 10-15 by hand.

2-First Steps: Mixing and Soaking: Once your dough is smooth and elastic, shape it into a ball, cover it, and let it rise until it’s doubled in size that’s roughly 1 to 1 ½ hours. After that, punch it down and let it rest for 10 minutes while you preheat your oven to 400°F and line a baking sheet. 3-Shaping, Boiling, and Baking: Divide the dough into 8 pieces, roll each into a ball, poke a hole in the center, and stretch it out place them on your baking sheet and let them rest for another 10 minutes.
