Ingredients

– 480 ml (2 cups) beef broth or vegetable/chicken broth
– 480 ml (2 cups) water
– 340 g (12 oz) dried orecchiette (or any short-cut pasta)
– 1 Tbsp sherry vinegar (or red/white wine vinegar, apple cider vinegar)
– Salt and freshly ground black pepper, to taste

Instructions
1-Heat the oil in a large skillet or pot over medium heat until it shimmers.
2-Add the sliced onions plus a pinch of salt. Cook, stirring every 3 to 4 minutes, for 25 to 30 minutes until deeply caramelized; add a splash of water if the mixture looks dry.
3-Stir in the minced garlic, sliced mushrooms, and thyme; sauté 3 to 4 minutes until the mushrooms soften.
4-Deglaze with the white wine, scraping the browned bits from the bottom.
5-Sprinkle the flour over the vegetables and cook 2 to 3 minutes, allowing the mixture to thicken.
6-Pour in the broth and water, season with salt and pepper, and bring to a boil.
7-Add the pasta and cook 8 to 10 minutes, stirring frequently, until al dente (adjust time per the pasta’s package directions).
8-Remove the pot from the heat and stir in the sherry vinegar.
9-Serve immediately, optionally topped with fresh herbs and toasted breadcrumbs.
