3 garlic cloves, pressed

2 sprigs fresh thyme or 1/2 teaspoon dried thyme

Instructions

1-First, in a large pan, drizzle some olive oil and add the butter, then toss in the thinly sliced onions. We’ll cook them over medium-low heat for 35 to 40 minutes, stirring frequently until they turn golden and caramelized. This step is key for that deep, savory flavor in French onion pasta.

2-Next, deglaze the pan with a splash of white wine or beef broth. It’s an easy way to lift all those tasty bits from the bottom of the pan. Then, add the fresh thyme leaves and stems along with the pressed garlic cloves and cook for a few minutes until everything smells amazing.

3-After that, stir in the uncooked pasta and beef broth, then let it simmer on medium-high heat for 15 to 20 minutes. Make sure to stir frequently so the pasta absorbs most of the liquid without sticking. Once done, remove the thyme stems to keep the texture just right.

4-Now, stir in the heavy cream and Parmesan cheese; cook for a few more minutes until the cheese melts and the sauce simmers beautifully. Finally, garnish with extra thyme leaves and Parmesan cheese, and serve it up. If you want to make it a complete meal, add protein like chicken, sausage, salmon, or steak strips.
