2 cans (10.5 ounces each) beef consommé or broth
2 cups long grain white rice, uncooked
3/4 cup (1 1/2 sticks) butter, cut into slices
1/2 to 1 teaspoon garlic salt (or to taste)
Optional: 1 medium diced onion
8 ounces sliced mushrooms
1 teaspoon Worcestershire sauce
1/4 teaspoon dried thyme
Black pepper to taste
1 cup shredded cheese such as mozzarella, Swiss, or provolone (optional)
Optional toppings: crispy fried onions or crushed crackers


Instructions

1. Preheat oven to 425°F (220°C) and grease a 9×13-inch baking dish.
2. Brown ground beef in a skillet with garlic salt until no pink remains and edges are slightly crisp; drain excess fat.
3. Combine uncooked rice and browned beef in the baking dish.
4. Stir in French onion soup, beef consommé, and about 3/4 cup water (adjust if adding mushrooms).
5. Arrange butter slices evenly on top.
6. Cover tightly with foil and bake for 30 minutes.
7. Meanwhile, if using onions and mushrooms, sauté diced onion and mushrooms with dried thyme until softened and golden.
8. Add Worcestershire sauce and black pepper to the sautéed mixture.
9. Remove casserole from oven, remove foil, fold in the sautéed onion and mushroom mixture gently.
10. Bake uncovered for another 25-30 minutes until top is browned.
11. For a cheesy version, add shredded cheese during the last 10 minutes of baking.
12. Optional: top with crispy fried onions or crushed crackers and bake briefly until golden and crisp.
