Cream of mushroom soup
Onion soup mix
Water or chicken broth
Salt
Black pepper
Instructions
1. Preheat your oven to 350°F.
2. Lightly grease a 9×13-inch baking dish.
3. Spread uncooked instant rice evenly in the bottom of the dish.
4. In a bowl, mix cream of chicken soup, cream of mushroom soup, and water or broth.
5. Pour the soup mixture over the rice, spreading it evenly.
6. Place boneless, skinless chicken breasts on top of the rice and soup mixture.
7. Sprinkle a packet of onion soup mix evenly over the chicken.
8. Cover the baking dish tightly with aluminum foil to trap moisture.
9. Place the dish in the preheated oven and bake for about 90 minutes.
10. Avoid opening the foil while baking to keep the steam inside.
11. Once done, carefully remove the foil and check if the rice is tender and the chicken is fully cooked.
12. Let it rest for a few minutes before serving.
13. Serve hot with a side of vegetables, salad, or crusty bread.
14. Store any leftovers in an airtight container in the fridge for up to 3 days.
Notes
Cover the dish tightly with foil to keep the moisture in and prevent the rice from drying out.
Try adding vegetables like peas, carrots, or mushrooms for extra flavor and texture.
For a healthier version, use low-sodium soups and substitute brown rice, but adjust the baking time as needed.
