Description

Ingredients

– 1 gallon whole milk This provides the creamy base for curd formation and gives the cheese its rich flavor; using whole milk ensures the best texture, as lower fat options can make it crumbly.

– ⅔ cup white vinegar (or lemon juice or apple cider vinegar as substitutes) This acts as the acid to curdle the milk and separate the curds from the whey.

– 2 teaspoons salt This enhances the flavor and helps preserve the cheese.


Instructions

1-Heat 1 gallon of whole milk in a large pot over medium heat until it reaches about 185°F (85°C), stirring frequently to avoid scalding the milk.

2-Remove the pot from heat, stir in the ⅔ cup white vinegar and 2 teaspoons salt, then let the mixture sit for 15 minutes so the curds can form properly.

3-Strain the curds from the whey using cheesecloth or a clean muslin towel placed over a colander and bowl, making sure to capture the whey for later use.

4-Twist the cheesecloth around the curds to shape them into a ball, tie it securely, and place it in the refrigerator over a bowl to drain for at least 4 hours or overnight.

5-Unwrap the chilled cheese, slice or crumble it, and serve it right away in your favorite way, like spreading on crackers or using as a pasta filling.
