Ingredients
4 cups chopped rotisserie or cooked chicken (can substitute with chicken breast, shrimp, steak, or thighs)
1 cup diced green bell pepper
1 cup diced red bell pepper
1 cup diced yellow onion (or 1 cup frozen diced onion and bell pepper blend)
2 (about 8.8-ounce) packages Spanish style or instant rice, cooked or uncooked depending on recipe version
1 (10.5 ounce) can cream of chicken soup (or homemade substitute)
1 cup salsa or diced tomatoes with chilies (undrained)
1 cup sour cream
8 ounces cream cheese, softened to room temperature
8 ounces Mexican shredded cheese (divided use)
1 to 2 tablespoons oil (olive, avocado, or vegetable oil)
1 to 2 tablespoons fajita seasoning (store-bought or homemade)
Optional: 3 tablespoons chopped fresh cilantro for garnish
Instructions
1. Preheat oven to 350°F (175°C) and lightly oil or spray a 9×13-inch baking dish.
2. In a sauté pan, heat 1 tablespoon oil over medium heat; cook diced bell peppers and onion until translucent (about 5 minutes). If using frozen vegetables, add directly or briefly sauté.
3. In a large bowl or pan, combine cooked vegetables, chopped chicken, cooked or uncooked rice, cream of chicken soup, salsa or diced tomatoes with chilies, softened cream cheese, half the shredded cheese, sour cream, and fajita seasoning. Stir until creamy and well mixed.
4. Transfer mixture to prepared baking dish, cover with foil, and bake 15-45 minutes, longer if using uncooked rice, until bubbly and rice is tender.
5. Remove foil, sprinkle remaining cheese on top, and bake uncovered 5-10 minutes until cheese melts and turns golden.
6. Garnish with cilantro if desired and serve warm.
