Ingredients

– 22 ladyfingers

– 1 1/4 cups (300 g) strong brewed coffee

– 1 cup granulated sugar (200 g)

– 5 tablespoons unsalted butter (70 g)

– 1/2 cup heavy whipping cream (100 g)

– 2 cups mascarpone cheese (450 g)

– 1/4 cup cream cheese (65 g)

– 1 cup heavy whipping cream (245 g)

– Half of the caramel sauce

– Remaining caramel sauce minus 2 tablespoons for assembling


Instructions

1-Brew 1 1/4 cups (300 g) of strong coffee and allow it to cool slightly before use.

2-To make the caramel sauce, melt 1 cup granulated sugar (200 g) over medium-low heat in a non-stick pan, stirring gently until golden. Remove from heat, stir in 5 tablespoons unsalted butter (70 g) until combined, then return to low heat and slowly add 1/2 cup heavy whipping cream (100 g) while stirring until smooth. Optionally, add a pinch of flaky salt, then cool and strain to remove lumps.

3-In a bowl, combine 2 cups mascarpone cheese (450 g), 1/4 cup cream cheese (65 g), and half of the cooled caramel sauce, mixing gently until smooth.

4-Whip 1 cup heavy whipping cream (245 g) to soft peaks and fold it carefully into the cheese mixture for a light, fluffy texture.

5-For a child-friendly option, replace the coffee with warm milk mixed with some caramel sauce.

6-Dip the 22 ladyfingers briefly into the coffee (or caramel-milk) mixture, avoiding sogginess for the best structure.

7-Arrange a layer of soaked ladyfingers in a springform pan or ring mold, spread half the filling evenly on top, then add another layer of ladyfingers and drizzle 2 tablespoons of caramel sauce over this layer before spreading the remaining filling.

8-Refrigerate the tiramisu for at least 6 hours or overnight to set and develop flavors.

9-Warm the reserved caramel sauce slightly and pour it evenly over the top for a glossy finish, then refrigerate again to set.

10-Keep chilled until serving.
