– 1 and 1/2 cups shredded zucchini


Instructions

1-First, preheat your oven to 350°F and grease a 9×5-inch or 8×4-inch loaf pan to prevent sticking.

2-Combine dry ingredients: In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, and espresso powder, then stir in the chocolate chips for that extra chocolate punch.

3-Combine wet ingredients: In a separate bowl, whisk the eggs, oil, yogurt, sugar, and vanilla extract until smooth and well combined.

4-Mix wet and dry mixtures: Combine the wet and dry mixtures, gently folding in the shredded zucchini to keep the batter thick and moist.

5-Bake: Pour the batter into your prepared pan and bake for 45 to 55 minutes, covering with aluminum foil halfway through to avoid over-browning.
