Ingredients
– 6 eggs
– 8 ounces of ditalini, small penne, or elbow macaroni
– 3/4 cup mayonnaise
– 1 1/2 tablespoons dijon mustard
– 1 teaspoon white vinegar or fresh lemon juice
– 1 clove garlic, finely minced or crushed to a paste
– 1/2 teaspoon kosher salt (adjust to taste)
– 1/4 teaspoon smoked paprika
– 1/4 teaspoon black pepper
– 2 tablespoons red onion, finely chopped
– 2 tablespoons green onions
– Optionally, 1/4 cup cooked and crumbled bacon
Instructions
1-First, hard boil the 6 eggs by placing them in a pot with cold water, bringing it to a boil, and simmering for about 10 minutes. Cool them in ice water, peel, and set aside for chopping.
2-Next, cook 8 ounces of ditalini, small penne, or elbow macaroni according to the package instructions until al dente. Drain and rinse with cold water to keep it firm.
3-Chop the peeled eggs, along with 2 tablespoons of red onion and 2 tablespoons of green onions, for that added crunch.
4-In a large bowl, mix 3/4 cup mayonnaise, 1 1/2 tablespoons dijon mustard, 1 teaspoon white vinegar or lemon juice, 1 clove minced garlic, 1/2 teaspoon kosher salt, 1/4 teaspoon smoked paprika, and 1/4 teaspoon black pepper to form the creamy dressing.
5-Gently fold the chopped eggs, onions, and cooked pasta into the dressing until everything is evenly coated. If using, add the optional 1/4 cup crumbled bacon for extra flavor.

Notes
🥄 Use a garlic press to easily mince garlic or substitute with garlic powder.
🌶 For a bit of heat, add a pinch of cayenne pepper or hot sauce to the dressing.
