Ingredients

– 1 lb shrimp, peeled, deveined, and chopped into bite-sized pieces (fresh or thawed frozen)

– 1 tsp smoked paprika

– 1 tsp garlic powder

– Salt and pepper to taste

– 2 tbsp olive oil

– 1 cup heavy cream

– 3/4 cup shredded mozzarella cheese

– 1/2 cup grated Parmesan cheese

– 1/2 tsp Italian seasoning

– 4 large flour tortillas

– 1 cup all-purpose flour

– 2 large eggs, beaten

– 1 1/2 cups seasoned breadcrumbs (or plain with added seasonings)

– Vegetable oil for frying (enough to submerge or come halfway up the sides)

– Fresh parsley, chopped (optional garnish)


Instructions

1-First, sauté the shrimp in olive oil with smoked paprika, garlic powder, salt, and pepper over medium heat for 3 to 5 minutes until just cooked and pink. Set them aside to cool a bit.

2-Next, heat the heavy cream gently over low heat for about 3 to 4 minutes until it starts to simmer, then stir in the mozzarella, Parmesan, and Italian seasoning until everything melts into a smooth sauce.

3-Now, lay out the flour tortillas and spoon the Alfredo sauce down the center, making sure to leave the edges clear. Top that with your cooked shrimp, then fold in the sides and roll the tortillas tightly into burritos. For the breading, set up three dishes: one with flour, one with beaten eggs, and one with breadcrumbs.

4-Dip each burrito first in the flour, then in the egg, and finally coat it well with breadcrumbs. Heat vegetable oil to 350°F (175°C) and fry the burritos in batches for 2 to 3 minutes, turning them occasionally until they’re golden and crispy. Once done, drain them on paper towels, slice in half, and add a drizzle of extra sauce or garnish with parsley if you like.
