Ingredients
– 1 tablespoon olive oil
– 1/2 medium onion, finely chopped
– 1 teaspoon grated fresh ginger

– 4 heaping tablespoons Thai red curry paste
– 4 cups chicken or vegetable broth
– 2 cups water
– Juice of 1 lime
– 3.5 ounces uncooked rice noodles
– 1 (13.5 ounce) can full-fat coconut milk
– 2 cups shredded cooked chicken (rotisserie recommended)
– A generous handful of fresh basil, torn
– A handful of fresh cilantro, chopped
– Chopped scallions, to taste
– Salt, to taste
– Pepper, to taste
– Lime wedges, for serving (optional)
Instructions
1-First: heat 1 tablespoon of olive oil in a large pot over medium-high heat and add 1/2 medium onion, finely chopped. SautΓ© for about 5 minutes, stirring now and then until it softens.
2-Next: mix in 1 teaspoon of grated fresh ginger, 3 cloves of minced garlic, and 4 heaping tablespoons of Thai red curry paste, cooking for 30 seconds until everything smells amazing.
3-Then: pour in 4 cups of chicken or vegetable broth, 2 cups of water, and the juice of 1 lime, along with 3.5 ounces of uncooked rice noodles. Bring it to a gentle boil over high heat and let it simmer.
4-After that, stir in 1 (13.5 ounce) can of full-fat coconut milk and 2 cups of shredded cooked chicken, then lower the heat to medium-low and simmer for 10 minutes to blend the flavors.
5-Finally, add a generous handful of torn fresh basil, a handful of chopped fresh cilantro, and chopped scallions to taste. Season with salt and pepper as needed, and serve right away with lime wedges if you like.
