Instructions

1-Begin by preparing the dressing: In a bowl, whisk together 3 tablespoons olive oil, ΒΌ cup rice wine vinegar, 2 tablespoons soy sauce (or 3 tablespoons coconut aminos), 1 tablespoon toasted sesame oil, 2 teaspoons maple syrup, 2 cloves mashed garlic, 1 teaspoon ground ginger, and Β½ teaspoon sea salt until it’s well combined.

2-Toss the diced cucumbers, edamame, chopped cilantro or parsley, and green onions in a large mixing bowl.

3-Pour the dressing over the salad ingredients and mix gently to coat everything evenly, ensuring all the flavors meld together.
