Β½ teaspoon onion powder (or diced leeks or onions as substitute)
2 cups shredded sharp cheddar cheese, plus extra for garnish
1 cup half-and-half (or heavy cream)
ΒΌ cup chopped green onions for garnish


Instructions

1. Spray a 6-quart slow cooker with non-stick spray.
2. Combine frozen diced potatoes, chicken broth, cream of chicken soup, cream cheese cubes, ranch dressing mix, black pepper, onion powder, and 1 cup of the cooked bacon in the slow cooker.
3. Cover and cook on low for 5 to 8 hours, or on high for 2 to 3 hours, until potatoes are tender.
4. About 15 to 30 minutes before serving, stir in half-and-half. Optionally, lightly mash some potatoes or use an immersion blender for smoother texture.
5. Add shredded cheddar cheese, cover, and warm until cheese melts.
6. Taste and adjust seasoning with salt if needed.
7. Serve topped with remaining cheddar cheese, reserved bacon bits, and chopped green onions.
