– Olive oil for roasting garlic, amount as needed
Instructions
1-First, roast the garlic for the butter: cut the 2 heads of garlic, drizzle with olive oil, and season with salt and pepper. Pop them in the oven at 425Β°F (about 220Β°C) for 30 to 45 minutes until golden brown. Once done, mix it with 1 tablespoon finely chopped parsley, 8 tablespoons softened unsalted butter, 1/8 cup grated fresh parmesan, and salt and pepper to taste thatβs your garlic butter spread.
2-Next, slice and hollow out the 4 sub rolls, spread them with the garlic butter and extra parmesan, then bake them open side up for 10 to 15 minutes until golden. For the chicken, set up your breading station with flour, a mixture of Caesar dressing and 2 tablespoons water, and breadcrumbs or panko crumbs. I always gently flatten the 1 pound of chicken tenderloins inside a zip-lock bag with a meat mallet to keep them even and juicy itβs a game-changer!
3-Bread the chicken by coating it in flour, then the Caesar dressing-water mix, and finally the breadcrumbs. Fry in avocado oil over medium heat until golden brown on both sides. While thatβs cooking, toss the chopped 2 hearts of romaine lettuce with Caesar dressing, the juice of 1 lemon, and fresh grated parmesan.
4-Assemble by placing the fried cutlets into the toasted sub rolls, add the dressed lettuce, and top with more parmesan. The whole process takes about 10 minutes for prep and 25 minutes for cooking, totaling 35 minutes.
Notes
π Gently flatten chicken tenderloins inside a bag to maintain juiciness and even cooking.
π₯ Use watered-down Caesar dressing instead of egg wash for extra flavor and better breading adherence.
π₯ Test your frying oil by sprinkling breadcrumbs to ensure perfect crispiness without oil overheating.
