Ingredients

– 1 ½ teaspoons smoked paprika for the Cajun seasoning

– 1 teaspoon oregano for the Cajun seasoning

– 1 teaspoon thyme for the Cajun seasoning

– 1 teaspoon garlic powder for the Cajun seasoning

– 1 teaspoon onion powder for the Cajun seasoning

– ½ teaspoon cayenne pepper for the Cajun seasoning; adjust to taste for heat level

– ½ teaspoon black pepper for the Cajun seasoning

– ½ teaspoon salt for the Cajun seasoning

– 1 tablespoon olive oil for cooking

– 1 tablespoon butter for cooking

– 1 ½ pounds boneless, skinless chicken breasts, cut into 1-inch cubes

– 1 medium yellow onion, diced

– 12 ounces penne pasta uncooked; serves as the base

– 1 (14.5 ounce) can fire roasted diced tomatoes, with juices

– 3 cups chicken broth

– 4 ounces cream cheese, cut into chunks for the creamy sauce

– 2 green onions, thinly sliced for garnish


Instructions

1-First, prepare the Cajun seasoning by combining 1 ½ teaspoons smoked paprika, 1 teaspoon oregano, 1 teaspoon thyme, 1 teaspoon garlic powder, 1 teaspoon onion powder, ½ teaspoon cayenne pepper, ½ teaspoon black pepper, and ½ teaspoon salt in a bowl.

2-Coat 1 ½ pounds of cubed chicken breasts with 2-3 tablespoons of the seasoning mix.

3-Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium-high heat, then cook the chicken for 3-4 minutes per side until browned. Remove and set aside.

4-Sauté 1 diced medium yellow onion in the same skillet for 3-4 minutes until softened.

5-Add 12 ounces uncooked penne pasta, one 14.5-ounce can of fire roasted diced tomatoes with juices, and 3 cups chicken broth. Stir well and bring to a boil.

6-Reduce heat, cover, and simmer for 10 minutes, stirring occasionally, until pasta is tender.

7-Return the chicken to the skillet with 4 ounces cream cheese chunks. Stir until the cheese melts and the chicken is fully cooked, then garnish with 2 thinly sliced green onions and serve.
