Instructions

1-In a medium saucepan, combine 1 cup water, Β½ cup unsalted butter cut into pieces, and ΒΌ teaspoon salt. Heat over medium until the butter melts completely and the mixture boils.

2-Remove from heat and stir in 1 cup all-purpose flour all at once. Return to low heat and stir vigorously until the mixture forms a ball and pulls away from the sides, about 2 minutes.

3-Transfer the dough to a bowl and let it cool slightly. Add 4 large eggs one at a time, beating well after each until the dough is smooth and glossy.

4-Shape the dough into mounds on your prepared sheet and bake at 425Β°F (220Β°C) for 15 minutes, then reduce to 350Β°F (175Β°C) for 20 more minutes until golden.
