Ingredients

– 16 ounces full-fat brick-style cream cheese, softened to room temperature

– 1 and 3/4 cups shredded sharp white cheddar cheese

– 2 tablespoons chopped fresh chives, divided

– 2 teaspoons chopped fresh parsley

– 1 teaspoon light or dark brown sugar

– 1 teaspoon garlic powder

– 1/4 teaspoon salt

– 1/4 teaspoon freshly ground black pepper

– 3/4 cup finely chopped dried cranberries, divided

– 3/4 cup finely chopped pecans, divided


Instructions

1- Beat the softened cream cheese on medium-high speed until it’s smooth and creamy, which takes about 2 minutes, using a mixer or just by hand if that’s what you have.

2- Add the shredded cheddar cheese, half of the chopped chives, chopped parsley, brown sugar, garlic powder, salt, pepper, half of the dried cranberries, and half of the chopped pecans; mix everything until it’s well combined, then shape it into a ball if needed.

3- In a small bowl, mix the remaining chives, dried cranberries, and pecans for the coating, then roll your cheese ball in this mixture to cover it evenly.

4- Wrap it tightly in plastic wrap and pop it in the fridge for at least 1 hour, or up to 5 days, to let the flavors meld.

5- Before you serve, let it sit at room temperature for 20 to 30 minutes to soften a bit, then pair it with crackers and a spreading knife for the best experience.

6- For leftovers, keep it wrapped tightly in the fridge for up to 10 days to maintain that fresh taste.
