Ingredients

– 1 cup sugar

– 5 tablespoons unsalted butter, softened

– 1 cup mashed ultra-ripe banana

– 1/4 cup milk for moisture and flavor

– 2 large eggs

– 1 teaspoon vanilla extract

– 2 cups flour for structure and rise

– 2 teaspoons baking powder

– 1/2 teaspoon salt

– 1/2 cup chopped nuts (walnuts, pecans, or pistachios) optional to enhance taste and texture

– 1.5 cups coarsely chopped fresh cranberries

– 2 cups sifted confectioners sugar

– 3 or more tablespoons heavy cream to thin the icing as needed

– 1 teaspoon pure vanilla extract


Instructions

1-Preheat your oven: preheat your oven to 350Β°F and placing the rack in the center, then grease an 8Β½ by 4Β½ inch loaf pan or line it with parchment paper. This sets the stage for a loaf that’s moist and full of flavor.

2-Blend the sugar and butter: in a medium bowl, blend the sugar and softened butter until smooth, creating a creamy base.

3-Add wet ingredients: add the mashed banana, milk, vanilla extract, and eggs; mix everything thoroughly to combine the wet ingredients.

4-Stir in dry ingredients: in another bowl, stir in the dry ingredients flour, baking powder, and salt just until moist, being careful not to overmix for the best texture.

5-Fold in nuts and cranberries: gently fold in the nuts and cranberries to distribute them evenly.

6-Pour batter and bake: Pour the batter into the prepared pan, smoothing the top for even baking. Bake for 1 hour and 10 minutes or until a toothpick inserted in the center comes out clean, then let it cool on a rack before slicing.

7-Prepare optional icing: sift the confectioners sugar into a bowl and gradually add heavy cream, one tablespoon at a time, until you reach the desired consistency. Stir in the vanilla extract and drizzle it over the cooled bread for an extra touch.
