Ingredients

– ½ pound medium shrimp, peeled and deveined

– ½ pound pre-cooked crab meat, checked for shells

– 1 small red bell pepper or 2 tablespoons chopped celery or green onion

– 2 cloves garlic, minced

– 1 to 1½ tablespoons tomato paste or tomato sauce

– ½ teaspoon Old Bay seasoning (optional)

– Hot sauce, to taste

– 1½ to 2 cups half-and-half cream

– ¼ to ½ cup white wine or 2 tablespoons dry sherry (optional)

– Salt and pepper, to taste

– Parmesan cheese, chopped chives, parsley, or green onions


Instructions

1-Gather your ingredients: Ensure crab meat is checked for shells and shrimp are peeled and deveined. Prepare onions, garlic, and measure stock and cream.

2-Sauté aromatics: Melt butter or heat olive oil in a large pot over medium heat. Cook onion and red pepper or celery until softened, about 3–5 minutes.

3-Add garlic and seasonings: Stir in minced garlic and cook for 1 minute. Add tomato paste or sauce, hot sauce, Old Bay seasoning, salt, and pepper. Cook for 2 minutes to deepen flavors.

4-Simmer the base: Add half-and-half and white wine or sherry (if using) to the pot. Bring to a gentle simmer, allowing flavors to meld.

5-Add seafood: Add shrimp and crab meat, cooking just until shrimp are opaque and protein warmed through without overcooking.

6-Blend for smoothness: Use an immersion blender or transfer soup in batches to a blender. Puree until smooth and velvety. Reserve some seafood pieces before blending for garnish if desired.

7-Final seasoning: Return bisque to pot if necessary, adjust seasoning for salt, pepper, or hot sauce to taste.

8-Serve: Ladle bisque hot into bowls. Garnish with Parmesan cheese, chopped chives, parsley, or green onions. Optionally, drizzle with extra half-and-half for added creaminess.
