Ingredients
1 cup (226 g) unsalted butter, melted and browned
1 1/2 cups (300 g) light brown sugar, packed
1/2 cup (100 g) granulated sugar
2 large eggs at room temperature
1 large egg yolk at room temperature
2 1/3 teaspoons vanilla extract
2 1/3 cups (292 g) all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 3/4 cups (170 g) old-fashioned rolled oats
3/4 cup (60 g) sweetened flaked coconut
1/2 cup (58 g) pecans, roughly chopped
1 1/2 cups (255 g) semisweet chocolate chips
Optional: 1 teaspoon flaky sea salt for finishing
Instructions
1. Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
2. In a large bowl, whisk together the browned butter, light brown sugar, and granulated sugar for about 2 minutes.
3. Add the eggs and egg yolk, followed by the vanilla extract, whisking until fully combined.
4. In a separate bowl, mix the flour, baking soda, cinnamon, and salt. Add in the oats, coconut, pecans, and chocolate chips.
5. Carefully fold the dry ingredients into the wet ingredients to prevent overmixing.
6. Scoop 2-inch balls of dough onto the prepared baking sheets, spacing them at least 2 inches apart.
7. Bake each sheet for 12 to 14 minutes until the edges are golden and the centers are slightly soft.
8. After baking, press additional chocolate chips and pecans on top if desired, and sprinkle with sea salt.
9. Let the cookies cool on the baking sheet for 10 minutes before transferring to a wire rack.
