Ingredients

– 2 cups flour

– 1 cup cornmeal

– 1 cup sugar

– 1 ½ tablespoons baking powder

– 1 teaspoon salt

– ½ cup (8 tablespoons) melted butter

– ½ cup oil (vegetable oil recommended but can also use canola, olive, or avocado oil)

– 1 ¼ cups milk

– 3 large eggs

– Honey and extra butter for serving (optional)


Instructions

1-First, preheat the oven to 350°F (175°C) and grease a 9×13 inch pan to avoid any sticking issues.

2-In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt until everything is well mixed. This step ensures your dry ingredients blend evenly for that fluffy result.

3-Next, in a separate medium bowl, combine the melted butter, oil, milk, and eggs. Stir them until they’re fully incorporated, then pour this wet mixture into the dry ingredients. Gently mix everything together until just combined overmixing can make your cornbread tough, so keep it light.

4-Pour the batter into your prepared pan and smooth it out. Bake for 35 to 45 minutes, or until the top turns golden and a toothpick inserted in the center comes out clean or with a few dry crumbs. Let it cool in the pan for 15 to 20 minutes before slicing, and feel free to serve with honey and extra butter if you like.
