Description

2 large room temperature eggs

3 cups (about 371 grams) all-purpose flour (or pastry, bread, or gluten-free all-purpose flour)

2 teaspoons baking powder

1/2 teaspoon salt

2 tablespoons whole milk (can substitute heavy cream or half and half)

2 tablespoons light corn syrup (important for shiny, hard frosting tops)

Gel food coloring (optional for frosting colors)

4 cups (about 480 grams) powdered sugar, sifted

4 tablespoons milk, room temperature

1 teaspoon vanilla extract

2 tablespoons light corn syrup

Instructions

1-Cream 1 cup butter and 1 cup sugar together until smooth.

2-Add 2 eggs and 1 teaspoon vanilla; beat to combine.

3-Mix in 3 cups flour, 2 teaspoons baking powder, and 1/2 teaspoon salt until a soft, pliable dough forms (not sticky).

4-Divide dough into two flat discs, wrap in plastic wrap, and chill for at least 2 hours or overnight.

5-Preheat oven to 350°F (175°C).

6-On a floured surface, roll one disc to 1/4 to 1/2 inch thickness.

7-Use cookie cutters to cut shapes; re-roll scraps up to two times.

8-Optionally brush unbaked cookies with milk or cream and sprinkle before baking for decoration without frosting.

9-Place cookies on parchment-lined baking sheet, spaced at least 1 inch apart.

10-Bake for 9-10 minutes until puffed and edges just set; do not brown.

11-Cool on baking sheet 3-5 minutes, then transfer to wire rack.
