Ingredients

– Β½ cup (113.5 g) Butter

– Β½ cup (110 g) Brown sugar

– ΒΌ cup (50 g) Granulated sugar

– 1 large Egg room temperature

– 1 Egg yolk room temperature

– 2 teaspoons Vanilla extract

– Β½ teaspoon Baking powder

– Β½ teaspoon Baking soda

– Β½ teaspoon Salt

– 1 teaspoon Ground cinnamon

– 1 tablespoon Cornstarch

– 1ΒΎ cups (245 g) All-purpose flour

– Β½ cup (62.5 g) All-purpose flour

– β…“ cup (73.33 g) Brown sugar

– 1Β½ teaspoons Ground cinnamon

– Pinch Salt

– 4 tablespoons Butter soft

– 1 cup Powdered sugar

– Sprinkle Ground cinnamon

– 1-2 tablespoons Milk


Instructions

1-Preheat oven to 375Β°F (190Β°C): Line two baking sheets with parchment paper.

2-Beat butter, brown sugar, and granulated sugar in a stand mixer with the paddle attachment on medium-high for 3-4 minutes until light and fluffy.

3-Add egg, egg yolk, and vanilla. Mix on low speed until smooth.

4-Slowly mix in baking powder, baking soda, salt, cinnamon, cornstarch, and flour, stopping just before flour is fully incorporated so some remnants remain.

5-Scoop dough into 3-tablespoon balls. Place 6 balls per baking sheet. Make an indentation in the center of each using the back of the scoop or your fingers, lightly sprayed if needed.

6-Prepare crumb topping: Mix flour, brown sugar, cinnamon, and salt. Cut in soft butter until combined. Place a handful into each cookie indentation.

7-Bake for 9-12 minutes until edges are golden brown. Immediately reshape warm cookies using a spoon or spatula if necessary. Cool completely on baking sheets.

8-Prepare glaze: Whisk together powdered sugar, cinnamon, and 1-2 tablespoons milk until smooth. Drizzle over cooled cookies.
