Ingredients

β Β½ teaspoon Baking soda

β 1 teaspoon Ground cinnamon
β 1 tablespoon Cornstarch
β 1ΒΎ cups (245 g) All-purpose flour
β Β½ cup (62.5 g) All-purpose flour
β β cup (73.33 g) Brown sugar
β 1Β½ teaspoons Ground cinnamon
β Pinch Salt
β 4 tablespoons Butter soft
β 1 cup Powdered sugar
β Sprinkle Ground cinnamon
β 1-2 tablespoons Milk
Instructions
1-Preheat oven to 375Β°F (190Β°C): Line two baking sheets with parchment paper.
2-Beat butter, brown sugar, and granulated sugar in a stand mixer with the paddle attachment on medium-high for 3-4 minutes until light and fluffy.
3-Add egg, egg yolk, and vanilla. Mix on low speed until smooth.
4-Slowly mix in baking powder, baking soda, salt, cinnamon, cornstarch, and flour, stopping just before flour is fully incorporated so some remnants remain.
5-Scoop dough into 3-tablespoon balls. Place 6 balls per baking sheet. Make an indentation in the center of each using the back of the scoop or your fingers, lightly sprayed if needed.
6-Prepare crumb topping: Mix flour, brown sugar, cinnamon, and salt. Cut in soft butter until combined. Place a handful into each cookie indentation.
7-Bake for 9-12 minutes until edges are golden brown. Immediately reshape warm cookies using a spoon or spatula if necessary. Cool completely on baking sheets.
8-Prepare glaze: Whisk together powdered sugar, cinnamon, and 1-2 tablespoons milk until smooth. Drizzle over cooled cookies.
