1 and a half cups unsalted butter softened

5 cups sifted confectioners sugar

One-eighth teaspoon salt

6 tablespoons canned unsweetened coconut milk or coconut cream


Instructions

1-Beat the softened unsalted butter on medium-high speed for about 5 minutes until it’s smooth and creamy this step really sets the foundation.

2-Gradually add 2 cups of the sifted confectioners sugar on medium-low speed until it’s just moistened, then mix in the remaining sugar one cup at a time, scraping the bowl as needed to keep it even.

3-Add the one-eighth teaspoon salt and the 6 tablespoons of canned unsweetened coconut milk or coconut cream, one tablespoon at a time, while mixing on medium speed until everything is fully incorporated.

4-Increase to medium-high speed and beat until the mixture is light and fluffy, remembering to scrape the bowl as required for that perfect consistency.

⏲️ Soften butter at room temperature for 1 to 2 hours to avoid lumps.
