Ingredients

– ½ cup confectioners’ sugar for the optional icing

Instructions

1-First, preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper for easy cleanup and even baking. It’s such a small step, but it makes a big difference in how your cookies turn out.

2-Next, in a medium bowl, whisk together the flour, baking soda, cinnamon, and salt until everything is nicely combined. This dry mix is the backbone of your cookies, giving them that perfect structure.

3-Then, using a stand mixer or hand mixer, cream together the butter, granulated sugar, and brown sugar until light and fluffy it takes about 3-4 minutes and is where the magic begins!

4-Now, add the egg and vanilla extract, mixing until just combined to keep things airy. Gently blend in the dry ingredients on low speed, being careful not to over-mix, which could make your cookies tough. Fold in the crushed cereal for that signature crunch, then scoop 3 tablespoons of dough per cookie onto your prepared sheets, spacing them about 1 inch apart. Bake for 10-12 minutes until the edges are golden, and let them cool before optionally whisking up the icing with confectioners’ sugar, milk, a pinch of cinnamon, and a pinch of salt to drizzle on top.
