Ingredients

– 4 cod fillets (150-200g each)

– 1 can (400ml) coconut milk

– 2 tbsp red curry paste

– 1 tbsp fish sauce

– Juice of 1 lime

– 1 tsp brown sugar

– 1 small red chili (sliced)

– Fresh coriander for garnish


Instructions

1-Preheat oven to 375°F (190°C). Prepare ingredients by measuring and chopping any vegetables, and rinse cod fillets well.

2-In a bowl, whisk together coconut milk, red curry paste, fish sauce, lime juice, and brown sugar to form the curry sauce base.

3-Place cod fillets in a baking dish; pour curry sauce evenly over them, coating each fillet.

4-Add sliced red chili and optional vegetables around the fish. Cover with foil to retain moisture.

5-Bake for 20-25 minutes or until cod is opaque and flakes easily.

6-Remove from oven and garnish with fresh coriander. Serve hot with steamed rice or preferred sides.
