– 1/4 cup superfine caster sugar for the crisp topping that caramelizes beautifully

Instructions

1-First, preheat your oven to 325Β°F and get your ramekins ready in a baking dish. Gently heat the heavy whipping cream with espresso powder and coffee-flavored liqueur until it simmers, then set it aside. In another bowl, whisk the 7 large egg yolks with 1/2 cup granulated sugar until they’re light and creamy this forms the base of your custard.

2-Next, slowly mix in the hot cream mixture to temper the eggs, stirring constantly to keep it smooth. Add the finely chopped semi-sweet chocolate, pure vanilla extract, and fine sea salt, whisking until everything melts together perfectly. Pour this into your ramekins, then place the baking dish in the oven and add hot water halfway up the sides for an even bake.

3-Bake for about 40-45 minutes until the custards are set but still a bit wiggly in the center. Let them cool to room temperature, then chill in the fridge for at least 2 hours. Just before serving, sprinkle 1/4 cup superfine caster sugar on top and use a kitchen torch to caramelize it for that crunchy finish.
